Here we have combined two 2008 rye barrel matured Aultmore casks and ⅓ of an Oloroso seasoned Aultmore octave (the remainder of the octave was bottled exclusively for Dornoch Castle Hotel). The spicy and nutty rye barrels combined with a heavy, albeit small, punch of the cask of Oloroso delivers some beautiful sweet and savoury flavours, probably more akin to what you would expect from something matured in Amontillado.
