The nose – imagine a dry grassy hillside in summer, with gorse flowers all around; it also has perfumed sandalwood and tropical mix (dried coconut, pineapple and papaya) – complex and interesting. The palate is unusually perfumed – ‘kissing a woman’s neck’, bergamot, grapefruit, sorrel leaf and quince jelly – mouth-watering and mouth-drying at the same time – also very complex. The reduced nose has sherbet lemons, effervescent orange vitamin C, unripe tropical fruits, barley fields at dusk, maple syrup and limestone. The palate finds toffee and chocolate Swiss roll; jasmine tea, hints of leather and bitter lemon – refreshing and more-ish – would make a good aperitif.
