As the whisky poured from the glass we found ourselves fascinated by an extraordinary hue that was the epitome of pink. After some deliberation and conversation we progressed to the nose, a fruity affair that stayed true to its colour. Strawberry ice cream and cherry pie swirled with creamy vanilla as richer notes of raisons and sultanas became embedded in pink liquorice. Brambles and raspberry lollies conjured memories of rose wine with soft plums and suggestions of sloe gin. The palate tickled like wasabi and pink pickled ginger before releasing cherry liqueur and rum trifle. Cocktail bitters and dry vermouth brought complexity that incorporated sawdust before raspberries and cola cubes bonded on the finish. After spending 11 years in an ex-bourbon hogshead this was transferred to a 1st fill red wine barrique for the remainder of its maturation.
