The nose – refined, refreshing and redolent – Christmas cake, orange boxes, kumquats, Toffifees and Nutella-filled crêpes. The palate – dark and sweet, velvety yet penetrating, with more oak than you could shake from a shipwright’s leather apron, cherry stones, sugary espresso dregs and exotic floral black tea. The reduced nose – passion-fruit, pineapple, rum-soaked raisins and enjoying coffee with almond baklava in an Athens street-café as orange blossoms rain down. The palate – marmalade cake, dark toffee, cinnamon and coconut – as bittersweet as your emotions when the glass is empty. After 13 years in ex-bourbon wood we transferred this into a second-fill toasted hogshead.
