Highland Park 19 year old bottled by the Scotch Malt Whisky Society evocatively named ’The Old Man And The Sea’ This rare find was originally matured in ex-bourbon hogsheads, then married in a single refill ex-bourbon hogshead, Society Cask No. 4.397. 

The whisky is presented at a robust cask strength of 59.5% abv and is full of old and dignified character. The nose offers a display of restrained heathery peat smoke, forest mushrooms, coastal freshness and dry waxy notes. There is a bolder more assertive peat on the palate with bonfire embers, boiler smoke and chamois leather. These flavours are underpinned by a big, hearty, wonderfully waxy texture. Perfect with a drop of water to give a rich, creamy, mouth filling body and notes of heather honey and lingering peat smoke.

With just 301 bottles released worldwide, this is a great opportunity for enthusiasts to secure a truly unique dram from an iconic distillery.

A wonderful nose, full of restrained, heathery peat smoke, forest mushrooms, coastal freshness, dry waxy notes and more subtle aromas of beach pebbles, gorse, heather honey and sweet menthol – a super-classical Orcadian malt, we all agreed. With water we got vapour rubs, camphor and menthol balm, wintergreen and many other medicinal herbal vibes, plus hessian cloth, cedar wood and deeper, firmer, drier peat-smoke notes. The palate displayed a slightly grubbier, more 'in yer face' peat profile, along with chamois leather, boiler smoke, bonfire embers and a big, hearty, waxy texture. Water revealed a rich and superbly creamy, mouth-filling texture, along with a wonderful combination of heather honey and peat smoke, more gorse flower and more waxiness. Terrific stuff! At 12 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
